Michelle's FreeFrom Stephen Irvine’s Courgettes with Onion and Tomato
Wheat, gluten, corn, soya, nut, egg and dairy free

Serves 4

2 tbsp olive oil
1 medium onion, peeled and sliced
4 medium courgettes (zucchini), sliced
2 largish tomatoes, skinned and chopped roughly
sea salt and freshly ground black pepper

Heat the oven to 180C/350F/Gas mark 4.
Heat the oil and gently cook the onion for 5 minutes. Add the courgettes (zucchini) and continue to cook for a further 8-10 minutes or until they are lightly browned.
Add the chopped tomatoes and season lightly. Cover the dish and bake for around 30 minutes.
Lovely served on its own or as an accompanying vegetable.
