FreeFrom Colcannon A traditional - and quite delicious - Irish dish. You can have it on its own as a vegetable or a vegetarian dish - or add the bacon rashers (slices) to make it a little more substantial. 1.5 kilo / 3lb 5oz baking potatoes, scrubbed Halve or quarter the potatoes and steam them until soft. Meanwhile cook the onions in the oil for 5-10 minutes or until nearly soft. Add the cabbage and kale and the stock. Mix well, cover, reduce the heat and cook gently for 10 minutes or until the cabbage is soft. Serves 6 - per portion Good Source of: Vitamin B1, B6, C & folic acid |
