Freefrom Soups from Cloona

Carrot SoupCloona carrot soup

Serves 4

Ingredients

  • 700g carrots
  • 15g ginger
  • 1 small onion
  • 1 clove garlic
  • 1 tbs olive oil
  • 600ml gluten and wheat free vegetable stock

Method

  1. Sauté garlic in oil, then onions, then sweat the carrots for 10 minutes. 
  2. Add stock and ginger.
  3. Cook for half an hour, then blend. 
  4. Garnish with fennel sprigs.

Spinach and Coconut Soup

Serves 4

IngredientsCloona spinach soup
  • 225g fresh spinach leaves, cut
  • 1 kilo potatoes, peeled and cubed
  • 1 small onion
  • 15g coconut cream
  • 100ml coconut milk
  • 600ml gluten and wheat free vegetables stock
  • 1 tbs olive oil

Method

  1. Heat oil and sauté onions. 
  2. Add potatoes and sweat for 10 minutes. 
  3. Add spinach, stock and coconut cream and cook for 3-5 minutes.  Blend. 
  4. Add coconut milk and serve promptly.
  5. Do not boil as this will darken the spinach - the bright green colour of this soup is vital to presentation. 
  6. Garnish with a sprinkle of paprika or a teaspoon of coconut milk.

Cloona mixed vegtable soup

Mixed Vegetable Soup

serves 12 people approx – it’s hard to do less!

Ingredients

  • 1 cabbage
  • ½  swede
  • 1 white turnip
  • 1 kohlrabi
  • 1 parsnip
  • ½ cup red lentils
  • 1.8 litres gluten and wheat-free vegetable stock
  • 3 cloves garlic
  • 1 onion
  • 2 tbsp olive oil

Method

  1. Sauté the garlic in olive oil, then the onion, then add vegetables (cabbage last) and sweat for 20 minutes. 
  2. Add lentils, water and stock and cook for ½ an hour.
